Lemon and Poppy Seed Loaf

Ingredients

  • 3/4 cup or 175 g softened butter
  • 3/4 cup or 175 ml milk
  • 1 cup or 200 g regular sugar
  • 3 eggs (lightly beaten)
  • Grated Zest and Juice of 1/2 a lemon
  • 3 Tablespoons Poppy Seeds
  • 1 3/4 cups or 225 g Plain / All purpose flour (sieved)
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Heat oven to 160 C, Gas 3, 300 F. Grease and line your baking tin.
  2. Get all your ingredients ready, i.e sieve the flour, and add the salt and baking powder to the flour etc.
  3. Start with making the cake batter by creaming the butter and sugar until a pale light colour.
  4. Slowly add the beaten eggs to the mixer, on a low speed setting, a bit at a time. If the mixture starts to curdle or split, add a spoonful of your sieved flour, keep on adding the eggs, and a bit of flour if necessary, until all the eggs are added. Add the lemon Juice, zest and poppy seeds.
  5. Add half the milk with half of the flour, keeping the mixer on a slow speed. Once combined, add the remaining milk and gently fold in the remaining flour until combined.
  6. Transfer the cake mixture to the greased and lined loaf tin. Then place in the oven for 1 hr to 1 hr and 5 minutes.
  7. *** Please do test if the cake is done by using a skewer and poke it in the middle to see that it comes out clean. Every oven is different and cook times may vary a little.
  8. Have a cup of tea!
  9. When the cake is done, take it out of the oven and leave in the cake tin until cool enough to transfer to a cooling rack.
  10. Allow to cool. Store in an airtight container.

Coconut Almond Bread

Ingredients

  • 2 eggs
  • 1 cup sugar
  • ½ cup shortening
  • 1 tsp. coconut extract
  • ½ c. buttermilk
  • ½ tsp. salt
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • 1½ c. flour
  • ½ c. coconut
  • ½ c. chopped almonds
  • Topping:
  • ½ c. sugar
  • ¼ c. water
  • 1 Tbsp. butter
  • 1 tsp. almond extract

Instructions

  • Beat eggs, sugar, shortening, and extract together.
  • Slowly mix in buttermilk and dry ingredients.
  • Pour into a bread pan coated in cooking spray.
  • Bake for 60 to 70 minutes at 325 degrees until knife comes out clean.
  • While baking boil sugar and water for a few minutes.
  • Remove from heat and add butter and extract.
  • Pour over cooked bread and let set for two hours before removing from pan.

Blueberry Coconut Banana Bread

Ingredients

  • 2 cups flour
  • 1 tsp teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt1/2 cup sugar
  • ¼ cup butter
  • 2 eggs
  • 5 Tbsp Greek yogurt
  • ½ teaspoon vanilla extract
  • 1 cup mashed bananas (about 2 medium very ripe)
  • ¾ cup blueberries, fresh or frozen
  • ½ cup shredded coconut

Instructions

  1. Preheat oven to 350 degrees. In a small bowl combine flour,baking powder,baking soda and salt. Set aside.
  2. Cream together sugar and butter in medium bowl.
  3. Add eggs one at a time. Mixing after each addition.
  4. Stir in yogurt and vanilla.Mix in mashed bananas. Mix in flour mixture until evenly moistened. Do not overmix. Stir in blueberries and coconut
  5. Pour into greased loaf pan.
  6. Bake for 50-60 minutes or until toothpick comes out clean.
  7. Let cool for 10 minutes in pan. Remove loaf to rack to cool.

Strawberry Cream Cheese Bread

Ingredients

1/2 cup butter, softened

1 cup sugar

4 ounces cream cheese, softened

2 eggs

1 teaspoon vanilla extract

2 cups flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon Kosher salt

1/2 cup buttermilk

1 1/2 cups strawberries, rinse, dried and chopped

Instructions

  1. Grease and flour a 9×5 inch loaf pan.
  2. With electric mixer cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla.
  3. In separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add buttermilk and only stir until just combined; do not over mix.
  4. Carefully fold in strawberries. Dough mixture will be thick.
  5. Bake in a 350°F oven for 50-60 minutes.
  6. Let it cool for at least 15 minutes before removing from pan.

 

Apple Praline Bread

Ingredients:

1 cup sour cream

1 cup brown sugar

2 eggs

2 tsp vanilla

2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups Granny Smith apples, peeled and finely chopped

1 cup nuts (walnut or pecan or a combo), divided

For the praline sauce:

¼ cup brown sugar and ¼ cup butter

Preheat the oven to 350 degrees. Lightly grease a 9 x 5 x 3 inch loaf pan. Set aside. (I used stoneware loaf pan for perfect cooking)

Using an electric mixer, beat together the sour cream, sugar, eggs and vanilla on low speed for a couple of minutes until well blended. Stop the mixer and then add in the flour, leavening agents and salt. Continue to beat on low until well combined.

Fold in the apples and half the nuts into the batter. Transfer the batter into the greased loaf pan.

Sprinkle the rest of the nuts on top and then press them lightly into the batter. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.

Cool in the loaf pan for about 20-30 minutes and then transfer to a wire rack to cool completely. So it doesn’t get too dark, I suggest using a light colored loaf pan.

For the praline sauce:

In a small sauce pan, place the butter and brown sugar. Using medium heat, bring to a boil. Lower the heat and then simmer lightly for about one minute, stirring constantly until the sauce thickens. Remove from heat and then drizzle over the bread. Cool completely.

Apple Cinnamon Pull Apart Bread

Ingredients

  • One 16.3 oz. package (8 count) refrigerated home-style biscuits
  • (you can use your own home-style biscuit recipe if you so desire)
  • 4 teaspoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 teaspoons crushed pecans
  • 1 small apple, cored and thinly sliced
  • ⅓ cup crushed pecans
  • Sauce:
  • 2 tablespoons brown sugar, packed
  • 2 tablespoons orange juice
  • 1 tablespoon butter
  • Icing:
  • 2 tablespoons low-fat cream cheese, softened
  • 2-4 teaspoons orange juice
  • ½ teaspoon vanilla
  • 1 teaspoon powdered sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Prepare an 8 x 4-inch loaf pan with a light coating of cooking spray.
  2. In a small bowl, mix together the granulated sugar, cinnamon and 4 teaspoons crushed pecans. Cut the biscuit discs in half and coat each piece in the sugar mixture. Alternately add and arrange the biscuits and apple slices in the prepared loaf pan. It will be a tight squeeze getting all of the pieces to fit, but just keep pressing the dough forward to squeeze them in. Sprinkle any remaining cinnamon/sugar mixture and ⅓ cup crushed pecans over the top of the loaf.
  3. Sauce: In a small saucepan over medium heat, mix together the brown sugar, orange juice and butter and bring to a boil. Remove from heat and pour the mixture over the top of the biscuits in the pan. Bake for 25 minutes or until the center of the loaf is cooked through. Remove and cool slightly before removing from pan. If it starts to get too brown before the loaf is cooked through, cover with foil.
  4. Icing: In a small bowl, whisk together the cream cheese, 2 teaspoons orange juice, vanilla, and powdered sugar until smooth and creamy. If the icing is too thick, add small amounts of orange juice until you obtain the desired consistency. Drizzle over the bread while the bread is still warm.

Apple Cinnamon Loaf

  • brown sugar
  • ground cinnamon;
  • white sugar;
  • butter;
  • a couple of eggs;
  • one and 1/2 teaspoon of vanilla extract;
  • one and a half cup of all-purpose flour;
  • 1 and 3/4 teaspoons of baking powder;
  • half-cup of milk;
  • an apple;

First of all, peel and chop your apple and preheat your oven to 350 degrees. Put some grease and flour on a 9 x 5-inch loaf pan. Mix 1/3 cup of brown sugar and 1 teaspoon ground cinnamon in a bowl. Set aside. Beat a half cup of softened butter with 2/3 cup of white sugar in a bowl. Use an electric mixer for this, until the mixture becomes smooth and creamy. Beat the eggs, one at a time, until they mix and then add the vanilla extract.

Stir baking powder with flour in another bowl; and pour in the creamed butter mixture. Mix half-cup of milk into the batter until it becomes smooth. Pour half the batter into the prepared pan, then half the apples and half the brown sugar cinnamon mixture. Pat the apple mixture in a light manner into the batter.

Pour the rest of the batter over the layer of apples. Take the remaining apples and top the batter. Add some extra brown sugar or cinnamon mixture. Pat again apples in the batter and swirl with the help of a spoon some brown sugar mixture through apples. Put to bake for about half an hour. You know it’s finish when an inserted toothpick into it, comes out clean.
